><\/a><\/p>\n<p><strong>Sugo<\/strong><\/p>\n<p>champignons 500gr<\/p>\n<p>funghi misti 250 gr<\/p>\n<p>funghi secchi ( da ammollare) 30 gr<\/p>\n<p>pomodorini pachino<\/p>\n<p>alloro<\/p>\n<p>150 gr salsiccia<\/p>\n<p>vino bianco<\/p>\n<p>sale e pepe<\/p>\n<p>olio di oliva<\/p>\n<p><strong>Pasta<\/strong><\/p>\n<p>passare le patate lesse facendole cadere sulla farina , impastare con le uova, sale e 2 cucchiai di grana.<br \/>\n<strong><\/strong><\/p>\n<p><strong>Ripieno<\/strong> : Mettere in una ciotola,\u00a0 la ricotta la salsiccia sbriciolata, il grana, il trito di erbe aromatiche e lo scalogno tritato e rosolato nel burro.<br \/>\nStendere la pasta a 3 mm di spessore e distribuire il ripieno, coprire con la pasta e con un tagliapasta dentellato tagliare dei ravioli.<\/p>\n<p><strong>Sugo<\/strong> : rosolare nel burro 2 scalogni, aggiungere la salsiccia sbriciolata, bagnare con del vino bianco, il rosmarino, il prezzemolo, l\u2019alloro,\u00a0 i funghi, sale e pepe.<\/p>\n<p><strong>Fare cuocere 15\/20\u00a0 minuti.<\/strong><\/p>\n<p>Lessare i ravioli, condirli con il sugo e completare con abbondante parmigiano.<\/p>\n<p><strong>Consigli<\/strong><\/p>\n<p>Visto che nell\u2019impasto c\u2019\u00e9 la patata, esso risulta molto pi\u00f9 morbido, quindi bisogna abbreviare i tempi di cottura della pasta e toglierli dall\u2019acqua appena vengono a galla.<\/p>\n<p>Tenere un po\u2019 di acqua di cottura, e se serve aggiungerla al sugo di condimento per far saltare i ravioli.<\/p>\n<p><a
